Piperul gri

Exista doua produse diferite cunoscute sub acest nume:

  • un amestec de piper alb si piper negru, macinate fin
  • boabele plantei Piper cubeba, care au o aroma asemanatoare ienibaharului, dar putin mai amare

Origine: Insulele Java si Sumatra

Utilizare: in retete cu carne sau sosuri, dar si amestecat cu zahar. In Bucataria Marocana, se foloseste in patiserie, iar Bucataria Indoneziana, poate fi folosit ca ingredient al masala (curry). In Bucataria Poloneza este folosit pentru prepararea unui condiment specific, denumit Ocet Kubebowy si care contine: otet, cubebe, chimen si usturoi.
